I grill around 4 times a week and never use thermometers - Learn your grill like @Mikes@Micro said and you'll be fine.

Yes. I use it a lot when frying, or for food in the oven I usually know around when to check on it.

2 cans chickpeas (drained and rinsed)
1-2 tsp. salt
1/4 cup sugar dissolved in hot water
1/4-1/2 tsp. black/white pepper
1/4 tsp. crushed red pepper

Put the chickpeas in a container. Mix the rest of the ingredients and pour over them. Refrigerate until well marinated and flavorful (you may need to flip over the container).

Would this work well if cooking my own chickpeas?

Probably, but it would probably work faster if you cook it with the other ingredients but the measurements would have to change.
DW came up with this recipe because we have a gazillion cans from the food distibutions

Microwave is better than oven IME.

Fresh or overnight?

Overnight is easier because you don't have a crispy crust. Just add a little water, cover on 200-225f

Fresh you can actually cover in wet bounty, ziploc and microwave for an easy warming up.
