I think my wife tried a few times. the 70% comes out better.

we do 100% white ww .
My understanding from several farming, milling and kashrus experts, www does not have chodosh issues
Used to be available at TJs now we get it from Wegmans

We have a local old fashioned mill still operating, I really wanted to get the real thing from there but it's of the red variety, which I understand is going to make it harder to get good challah.

If you use white whole wheat it tastes more like white flour but has all the benefits of whole wheat. You can find it either online or at certain stores. Also don't use 100% whole wheat since it will make the dough very dense. And use about 60% whole week to not notice a difference in the texture, but if you're using white whole wheat you can use a higher percentage of whole wheat.
