My understanding from several farming, milling and kashrus experts, www does not have chodosh issues
Used to be available at TJs now we get it from Wegmans

white whole wheat. It's white wheat vs red wheat. It still whole grain.
The Difference Between Whole-Wheat and White Whole-Wheat Flour
While both flours are 100 percent whole wheat, the difference is in the variety of whole wheat.

Whole-wheat flour is made from hard red spring or winter wheat, which has a nutty, hearty taste.
White whole-wheat flour is made from hard white spring or winter wheat, which has the exact same nutritional value of whole-wheat flour, but because of the variety used, has a milder flavor and paler color.

If you use white whole wheat it tastes more like white flour but has all the benefits of whole wheat. You can find it either online or at certain stores. Also don't use 100% whole wheat since it will make the dough very dense. And use about 60% whole week to not notice a difference in the texture, but if you're using white whole wheat you can use a higher percentage of whole wheat.
