Ask it to build a (pdf?) scraper program then you can run it as many times as you want locally.
Easiest language to get a frontend made without having to do anything is in JavaScript just ask it to make it into a webpage.
I'm sure JavaScript has scraper libraries it can use.

We deal with hundreds of different formats.

if he asks financial questions or adds documents etc and wants them summarized

I’m asking how secure is he worried about. He can use the enterprise versions of ChatGPT and others, which wouldn’t use his data for model training, but you can still be concerned with data being transmitted to a cloud server (although it will encrypted), and more concerningly, stored on a cloud server. If using the temporary chat, it will be safer, but chatgpt may still store the data internally up to 30 days.

Which would work best to extract data from utility bills to defined columns on a spreadsheet or a format simple to paste onto a spreadsheet? which would allow the most bills for free?

We use bill.com and have it connected to our ERP to streamline our AP payments and data entry and they have their own portal as well. I think it’s likely that they have a version or feature that can sync or export to a spreadsheet. Bill.com uses AI to automatically extract data from an invoice, you can easily make corrections and it will automatically learn for the next time it sees that invoice format.

We aren't using it to track accounts payable though and I don't see an ability to use only that feature without the rest of the platform.
