Get any camera with separate slots for the battery and card, insert an SD card, and superglue the door shut.

Yes, but note my edit. It limits your camera models.

(Unless the camera can charge by being plugged in directly, but then you lose the ability to use a spare or new battery.)

If you are careful, you can probably just superglue the actual SD card into the slot. No?

I was thinking of that, but it's probably too risky.

Also, a superglued door is likely reversible if you ever have to. An SD card, not so much.
