Very often the Hechsher requires different sources for ingredients which raise the cost. If they kasher that adds down time and expense.
2 things can be true at the same time. Kayco is a monopoly and a bully but could be other issues with kosher food market

I don't find that kosher brand canned foods are more than Shoprite. Same goes for jarred staples like mayonnaise etc.
