I was living in a remote area, no kosher meat, no Chabad House (yet).  A few Jewish students there, so I googled pareve cholent, found this recipe, and invited them for Shabbos.  Always came out delicious.  Years later, when my parents stopped eating red meat, I dug up the recipe, but realized that I couldn't use all those umami-rich flavors (ketchup, soy sauce, BBQ sauce) because of their high sodium content.  I'm still experimenting with various umami substitutions (including ExGingi's fried onion/kishke) and it's always good, sometimes very good, but it never quite reaches the excellence of the SuperRebbetzin's recipe.

I play around with it, not a professional.  Did some work on my own family, so have limited experience. 
Ethnicity - Jewish (?), Country - 19th century Russia, today's Belarus and Ukraine, and NY, NJ.

Where does one go for records from 19th century Odessa (current Ukraine, at the time Russian Empire)?

They did not.

This was a common practice btw, to write this information in the Shas. My family did manage to retrieve the Shas of my gg grandfather הי״ד from Hungary after the war and it has all this information in it.

Everyone already linked to that discussion, but that is a bunch of generations further back. He was not a mechaber sforim but was the BIL of the לקוטי מהרי"ח and a number of tshuvos in pri sadeh and chelkas sadeh are records of discussions with him in Bonyhad.
