I'm not much of a chluent guy, and usually get away shabbos day with some cold cuts, kugel and maybe genechtike chicken, but with this year first day yom tov is Shabbos, I don't feel comfortable with that, and looking for something tasty (meaty) that can stay hot without drying up.
Any ideas?

We had a similar issue on Rosh Hashana. While we are very much Chulent people, we wanted to do something special for Yom Tov so we made the following:
Lots of Sautéed onions on the bottom of the pot (normal pot, we use an Israeli plata but i assume this can be done in a crockpot as well)
After that, Lots of meat (we used brisket but it came out dryish), potatoes, sweet potatoes and carrots.
A can of crushed tomatoes and a bit of tomato paste.
Paprika, black pepper, honey, brown sugar, and salt.
Boiled it up and then set to low afterwards til shabbos and then transfered it to the plata.
Came out like a stew but not Cholent.
