If it says, for example:

It means as of now they are not flying until Dec. 5, not including, meaning they are set to restart on Dec 5.

Many airlines keep on pushing off the restart date.

In my mind there's a very high risk that UA and DL will cancel, how to quantify, maybe 25%?
For people who absolutely can't afford to change plans, eg you have a simcha, you booked a non cancellable hotel, and many others, book with elal, or at least stopover with elal from Europe. The new virgin Atlantic codeshare should allow more opportunities for this.

When you have a simcha you can't miss, you don't want to be gambling with % risk of cancellation.

A decent and cheaper alternative to LY direct is a positioning flight to Europe, then LY to TLV.

I am following the prices, It's only going up for the Bein Hazmanim weeks. Between Tisha bav to Elul.
The low cost airlines will most likely not add back anymore flights before the summer, as they work on early bookings. And from the other side the matzav in Eretz Yisroel becomes calmer day by day, besides the north, and many Frum families from the US will go for the summer.
IMO it will be high prices, EU or US to Israel.

There is a transfer desk in ATH (used by all airlines) when heading to connections, I once had a connection with Aegean onto United and they issued me there a new boarding pass

Not in my experience.
I had to exit ATH and reenter to collect my boarding pass at the EK counter.
