Southwest fll to ISP 8:30 flight arrives in ISP 11;20 or wtvr. Delayed till 12am, landed 2:40. Took forever to get uber, got to my hosts in woodmere at 4:21am.

Southwest gave out $100 vouchers, while nice, it's wholly inadequate. They aknowledged mechanical issues and plane shortages I'm guessing due to 737-max but getting to my destination at 4:21 am when it should have been 12sh is unacceptable.

Had it been any other time I'd have gone next day but didn't want to risk with pesach

What can I expect or request?

While a very stressful and disturbing experience, you have to look at the facts. Your flight arrived at it's destination 3:20 late.
I imagine $100 vouchers is reasonable compensation for that, though you can always ask for more if you feel you deserve more.

TruE but 3:20 late is heckuva huge deal when it's 2:40 am not 11:20pm.

Also Uber took 23 minutes to come given the hour and ISP isolation.

It really cost me to get to hosts at 4:20am for say 12:15

I understand you completely but I don't think the airline will feel it's their responsibility to ensure that Ubers are available when they land and they probably won't deferentiate between a day delay or a night delay.

Airline: SPIRIT
Flight: PHL-FLL
Incident: arrived the checkout counter 5 min before our 7am flight we were told we have 5 min to get to the gate to make the flight. Got whisked   through security arrived at the gate  only to be told we gave your seats away already.. our luggage left without us. Left with no food or anything. We got rebooked on AA 3pm flight to MIA our bags delivered to house

Plus $560 check for each passenger x7 written out on the spot.
