Well written and very detailed information.
Though I see you mentioned multiple times you had breakfast, lunch and dinner. And been reheating meals. What have you been eating for all the meals? Or did you bring a suitcase full of food? Ate food from chabad in hanoi and hoi an? Purchased food from them to go to have for the day? You ate the cut up fruits on that little 2 day voyage they had prepared?
I see you mentioned these points but never bothered to get into the specifics of what you ate. If you don't mind sharing that info would be cool. As well do you travel with any appliances?(cheese grill, panini maker) Knifes? Converters to convert 220 to 120?
As well in the hoi an chic hotel you must have trippled up and made the one bedroom accommodation work out for you guys.
Did any of you drink any coke or Pepsi products while there? Or any such items without a hechser? Or did you all munch on fruits and veggies from morning till evening?

We bring LOTS of food when we travel. We generally only eat from Chabad on Shabbos. Supper is Pomegranate type meals that we either heat up in hotel oven or Hot Logic.
Breakfast - fruit from hotel, everything else we bring. Coffee, yogurts, cereal etc.
Lunch: bread/wraps with chummus, rice cakes, tuna, cheese etc
Snacks: fruit, dried fruit, pretzels, granola bars etc
The only appliance I've ever traveled with is the Hot Logic.
Yes to Coke, that's generally the only item we'll drink without a hechsher. Otherwise it's water (we do also bring gatorade powder for super hot locations and pour into water bottles when needed).
