The general consensus among the enthusiasts (I'm not one, but I read MaximumPC and CustomPC, and they are) is that you shouldn't be building a $500 computer - you should buy one from an OEM. And your needs do not require more than that. ("So we put together this $500 system because we were bored, and it was fun, but it basically is just as good as a $400 OEM + the ability to upgrade it a bit.") If you want dedicated graphics for some reason you have not as of yet made clear to us, that would be one thing. Particularly easy to get a Ryzen pre-built, 5000 or newer with a G at the end, and I expect that its graphics grunt should last you the life of the system.
