Kosher home winemaking help and tips

Didn’t see any thread about this topic. (Maybe because not too many ppl do it)
 For all the people looking for sulfite free wine for Pesach now is the season to make your own…
 If there are any fellow winemakers that would be interested in splitting a a package of malolactic bacteria please reach out.

Malolactic fermentation, converts malic acid to lactic acids. It enhances flavor.
 
 Although it typically occurs (at some point) naturally in wine , having a culture provided the following benefits.
1. Controlling the flavor profile by using specific strains of bacteria.
2. The process will follow a specific schedule vs waiting for a wild bacteria can take much longer and unpredictable.
3. If wine is bottled before malolactic fermentation is done even if the wine tastes good. The wine can develop a fizz.
4.sometimes it will not occur naturally and then adding bacteria is the only option.

Are you copying that from somewhere?

I'd imagine for pesach people who want nothing added to their wine, want nothing added to their wine..

following. how does one start with this?
Grapes are avail now for purchasing in wine supply stores they will be coming in for the next month or so. (Make an order now for later as they run out)
 The process is pretty simple for basic wine.
1. Buy grapes and crush them (can be done by hand easily if small batch) and let sit in bucket with yeast in warm are for about week or two.
2. The hardest part without equipment. Squeeze out the juice and discard skins. (I use a clean cloth and twist it hard)
3. Put juice in a glass bottle with airlock and let sit till Purim. (Add oak chips for flavor)
 And your ready to drink

Are you trying to make a young wine?

A good aged wine should sit for at least 2 years

Also no need for fancy equipment (wine press) to squeeze the grapes you can use gravity to have the liquid drip from the skins (that makes the wine less tart from the pressed skins as well)


Also missing a bunch of in between steps there.

First timers beginner wine will be just fine with couple months to a year. Give yourself a season or three before you invest in expensive equipment and grapes
 There are some steps missing was just writing general proces..

There is a place not far from Lakewood called bacchus wine club (or something similar) there is also another place in NJ called Gino pinto.
