I was just on the phone with them booking a night, and requested that they reinstate my gold status (after it expired in February), and she suggested to enroll me in the platinum challenge starting from May...
Lo and behold, I check my account online later today, and it says I'm a gold member... I guess YMMV

Out of curiosity, if someone opens 4 SPG Amex's during the year (via churning) does it accumulate to 8 stays and 20 nights?

1. call amex cs and they will transfer you to spg.

Until the status expires, but not as soon as the amex is canceled.

i first chatted online with spg and asked for complimentory gold status and she said there is no way
The next day i called spg and asked and she said no problem!!! got an email right away and posted on my account within 5 minutes

I plan on staying at the Westin Maui for 5 nights and have SPG gold status.
If I spend 1,500 points on a room upgrade, will I be further upgraded at check in due to my gold status or is it a waste to spend the points for the upgrade since I will be upgraded with gold status anyway?

gold doesn't guarantee an upgrade
