But in today advanced technology they are still the same way?

Let's say water if the machine does that automatically even if this is for the jews it's ok because no one is doing a melacha directly.

Like water in Israel

If being on the ship on shabbos is inherently problematic, I would a hashgacha took care to ensure that their mashgiach is (or at least has the option of being  :)) a shomer Torah umitzvos

For those who question the difference between this and a hotel, I don't see why chilul shabbos is inherently part of operating a hotel on shabbos. Many shomer shabbos hotels would beg to differ.
Many are nichshal, but I believe it's possible to operate al hatzad hayoser tov.
You'll probably have to resort times to various kulos (such as the famous eliyahu raba )

What about all the restaurants that play music while wine is served? Does the hashgacha take responsibility for that?

...Its a major issue, at least among those who care to look into the metzius/halacha.
There are many, many people who do not use water that was made/pumped on shabbos.

The idea that bec of advanced tech things less melacha is done is sort of not really in touch with reality

How are boat works?
Electricity- if the have a generator and connected to the shore they still need someone to Press buttons and do melacha?

Water and waste they have to do a melacha ?
Can't they stay 1 day without touching the stuff ?
Is that impossible?

Explain to us
Because if they can be 24 hours alone and the goy still decide to do stuff for himself it's ok

AFAIK He is your employee and would be your poel and this heter has much less validity.

Almost all reliable ones have shabbos guidelines and if they don't then I would recommend avoiding them on shabbos.

They send an eruvin expert to resorts?
They certify that the rooms are ok for shabbos?

Sorta like whether the hechsher on a restaurant or simcha venue covers includes the surrounding halachic issues too...
