I think you can clear the whole confusion by just using Hebrew lol The word רבי does not mean my רב (the way אדוני means my אדון). Rather רבי is a word on its own.

Except that you can't pluralized a name (nor would you want to pluralize that acronym), so it must be 'our rav'.

I meant pluralizing the possessive (no idea if that's actually the right grammatical term) part - the נו in רבינו, but when I think about it my question has nothing to do with the plural part, just the possessive part. You explained that רבי is ראש בני ישראל. But if that's the case, why would you ever add נו, making it ראש בני ישראל שלנו - רבינו. If he's ראש בני ישראל, and you're part of בני ישראל, isn't the שלנו superfluous?

Exactly. Saying ראש בני ישראל שלנו would make as much sense as saying "Our President of The United States". In both case you are giving the subjects to possessors (I don't think I got the grammatical term right but I hope the point is clear).

ראש בני ישראל isn't the meaning of the word רבי, it is a רמז in the word.
