If the OTD spouse 'ruins' the utensils or the oven by not following the milk/meat rules, bringing in non-kosher items, etc.

But not the opposite. If the OTD is cooking in kitchen, the significant other can no longer eat anything that was prepared in that kitchen.

I am familiar with several mixed marriages, both ways.  In all nidda is kept and the non religious spouse is respectful of the religious one (which is why they're still happily married).  They also trust each other.  Which is why they eat each other's food.
In almost all cases there is no halachic problem trusting them to do as they say and there is no bishul akum.  These would not be considered מחלל שבת בפרהסיא

I'm familiar with a marriage where both sides think it is a mixed marriage, but really neither is frum.

Basically, each one thinks they are not frum but the other is, and are afraid to discuss it.  But they both told me.  I figure better not to tell each about the spouse, since this way they're still keeping a kosher home and raising their kids frum.
