We did a quick trip this winter, visiting some sites that I don't think are mentioned on this site, and I feel that they are mention-worthy.
1.Blue Spring State Park https://www.floridastateparks.org/parks-and-trails/blue-spring-state-park. With gorgeous, clear waters, we were able to see an enormous amount of fish. They protect manatees in this spring, and release it to the ocean when they are mature enough to withstand winter temps in the ocean.
It was very quiet and peaceful. I believe that in the summer swimming is allowed, and the scene is completely different.
There are well kept walking paths, a playground, and restrooms.
Boat rentals are available weather dependent.
Overnight camping is available as well.

2. Ponce Inlet Lighthouse and Museumhttps://www.ponceinlet.org/
Very well kept lighthouse and museum, spread over several structures. You can also climb the lighthouse for a magnificent view. We really enjoyed. There's also a playground and nearby lake where you can see people fishing.

3. Rocket Launch. We held our breath until the launch, hoping it wouldn't be canceled. (I scheduled our trip around 2 consecutive launches, so that if one fails, we get the 2nd one. one was delayed, but we were lucky enough for one to go on time).
We didn't capture any good pics, but being there was magnificent. We stood on the bridge over the Indian River (locals assured us this was the best place for nighttime viewing) and stood in awe as the river lit up, as if it were daytime. I read up a bit about how the launch works and, though we got a stiff neck watching the rocket disappear from our line of vision, and waiting for the detachment, I was happy to have that knowledge to know what to look out for. If I were to be in the area again, I'd definitely make an effort to get to a launch.

4. Black Point Wildlife Drive https://www.fws.gov/refuge/merritt-island/visit-us
While highly rated on Google, we found it a bit underwhelming. It was nice to see crocs up close, but we found the drive a bit too long. Being stuck behind amateur photographers who seemed to see things we couldn't, and driving 5-10 MPH didn't help either. I'm glad we went, but wouldn't go again. This is around a 25 minute drive from Kennedy Space Center, and can be paired for same day activity.
