And just because the fish market got it Thursday or Friday doesn't mean it was caught that day. A lot of these boats are out fishing for weeks at a time.

Keep in mind that many of the restaurants and sushi places get a big part of their fish as frozen on a regular basis (like tuna and tilapia). The stores defrost them (or refresh them
) as needed. So on the one hand, eating fish on Sunday may not be as bad as you think, since the store could have just defrosted it a few hours ago. On the other hand, just because you're eating fish on Wednesday does not necessarily mean the fish is fresh and caught recently.
