Correct. While their last opponent was considerate to their beliefs and changed to accomodate them, their current oppenent is not willing to do so.

I don't think it is and neither did the coach. They were warned at the beginning of the season it's silly to hold a grudge based on this... And if I was the other team heck ya I would want to play a bad team in the semi-finals. Some people just want to win it's not always about being peacy and accommodating the minority. That's what 'Murka is all about opportunity to succeed  and I applaud the other team for taking it :-)

I take that back. I though the other team was giving them a hard time with the switch. (While it may be the case, I haven't seen that reported)

One report I saw, is claiming that their opponent will get a free pass to the finals, and will not have to play on Friday. Don't know if its up to date.

Not everything is about being the best. At the end of the day I'd take a championship team over"the best team" and the other coach isn't choosing the lesser opponent the league is handing them to him. Hence the opportunity aspect... But now that this made ESPN I wouldn't be surprised if the coach agrees to accommodate the Jewish team... That would make winning that much sweeter for his team...

You might not like this but a forfeit would be the correct way to do this if the team does not play. They should not put in a substitute team.
