Then there's Startup Nation, which is a really cool book on Israel, but not quite historical.
By Way of Deception was an interesting book about the mossad.
The Liberty Incident, a book about the alleged sunk an Israeli ship intentionally during the 6-day war.
None of these are broad overviews of Israeli history, but they're all great books.
