A few ago I enjoyed it. The whole meal was served and there was a buffet with some extras (corned beef, entrecôte, kids foods, etc).

It was plated when I was there 3/27. Expensive, no buffet food, much smaller crowd than previously.

Food was a 4/10, service was a 2/10.

Im sure you have thought about this, but why not apply for a hilton card that gives gold status? Once approved you should be able to have the status register in your account

Yeah, but there's a shul across the street with set minyanim. Actually easier to go there than to walk down two flights on shabbos.

Even with Rabbanut  if you just stick with breakfast milchig/parve and are lenient re bishul israel like the Rama what are the potential issues.  I am assuming chalav israel and pat Israel are not an issue either?

It's all chalav yisroel and pas yisroel. Mashgiach vouches for checking checking veggies and all trumos/massros. During shmita everything was l'chumra, with no mechira or OB"D.
