And what do you think is happening differently in this regard in the Citadel that Rabbi Weiner 'recommends'?
I don't know but the typical answer is not that they are afraid but that they have a system in place to to monitor.

The 'system' is a Mashgiach walking around and checking. It is the same at the Citadel and Waldorf. Nobody has a camera or a team of Mashgiachim standing constantly by every burner.

Possibly that the kitchen and equipment are locked and surveiled more securely?

Locked and the cooks aren't allowed in? The kitchen staff at both hotels has Arabs.

Transparency between the mashgiach and rabbi weiners mashgiach they can come down talk to him whenever and he isn't afraid to show them or answer any questions they may have.
They have spoken to him many times and say he is trustworthy and can believe him in what's going down.
They also have good relationship with mashgiach in David intercontinental, the Ritz and a few others
The Waldorf you mention the name rabbi Weiner the mashgiach will stomp off and give you the so eat somewhere else if you don't trust me and you trust him.
Yes I have had it happen to me and others I have sent there many times.

That's the diffrence

The Waldorf may be just as good in kashrus but when there's nobody to talk to or who is afraid of letting people in to see what's going on or have a conversation with him makes you wonder what they are hiding.

I don't have first hand knowledge so I'm not going to say anything but I have heard enough second hand stories that I find it easy to believe Rabbi Kuber when he says there's issues with the bishul akum at WAJ that aren't a concern at the Citadel.

Out of curiosity, does the mashgiach at WAJ work for the hotel or for a kashrus agency?

That can be very different than "they are too scared" which sounds a bit cocky.

Even according to the rema's shita? I find that very hard to believe. Obviously not lechatchila, but bedieved.

Do they even try for more? It is very easy for it to be bishul akum even according to the RMA in a commercial kitchen. All you need is for the convection oven to stay open for a couple of miutes.
Why isn't the RMA lichatchila?

Is the mashgiach feeling this way adequate? What if he can't be found at that minute?
This was when they made eggs for you in the dinning room. The worker would ask a religious person to light the fire.

IIRC that is only regarding some parts of the RMA and not everything.

Many convection ovens have standing pilots, so it takes care of this issue.

not many. Very few. I believe the only new ones that have (in the US) are the ones that have shabbos mode.

Some brands build it that way on all their ovens.

Data point : the hotel is cracking down on 2nd guest bookings on points/fnc
One broker was doing lots of bookings and advertising in many places cheap rates (based off points ) for specific dates almost half of what hotel was showing.
The hotel and many travel agents got upset and are now putting a stop to this.
Also the Ritz is involved as their gm is the old Waldorf gm and still have contact with each other. so from what I heard they also may or have already stopped doing 2nd guest bookings.
Last week I know of people who got rejected from both places

Aren't lockout systems more or less standard in the US to prevent the AY/NJ from turning on anything iin the kitchen?
