Most are saying that after speaking tobthe mashgiach they are convinced that it's totally okay to eat there.
I just spoke to someone who is very familiar with the Hasgochas over there and he said that the Rabbanut Yerushalaim has a ton of kulos

to eat there on shabbos or takeout meals? dunno about right there but you can get in any takeout in yerusalayim. If you were going to pay full price by the Waldorf then their are people that cook meals for you to order and they will deliver it

And logistically how does the ordering the food work out? How  does it stay warm? Where does one eat it?

There are just so many heimish people going there.
All the people eating there (or the ones that care to ask) are not relying on the 'rabanut yerushalyim' rather the mashgiachs word that everything is ok an a high standard.

Up to you to trust him or not...

Thanks. Is there a good place to eat besides the room (perhaps a restaurant?) I need a place for the family that is  a Shabbos Seuda like atmosphere...

If everything was a highest standard they wouldn't have regular Rabbanut.
My guess is that most items are Mehadrin but they serve a few non mehadrin meat items like foie gras or non Mehadrin cheeses. That's usually the case when I asked the Mashgichim of other Rabbanut hotels.

I should add that because there is usually very good supervision in hotels (eg. Mashgiach temidi, experienced Mashgichim) many people feel fine eating there after talking with the mashgiach.
