New Glatt Kosher restaurant opened in Sofia a few months ago.

You have the synagogue and chabad.
The city is not that big.
Check out the Red Flat. It's a cool experience.
Otherwise you can do Free Sofia Tour. This group is pretty good and passionate.
Side note:
No uber in Sofia and there are many taxi scams. ONLY use the "YELLOW!" taxi app. There are many look alikes that are not legit so make sure you use the app.

You're probably in TLV by now.  From Sofia to Selestria there's the famous Pele Yoetz...

During my time living in Sofia, I worked nights so I cannot answer.
I found that in general there was not much to do within the city.
Public transportation within the city is cheap and good. You can use contactless to pay for your fare.

Onward departure is around 1pm on TUS airways. So have only a few hours in the morning to tour around.
