At night thats the worst way probably, as navigating it will take a long time and be very difficult.

+1, the beauty of route 1, is only visible by day, take the 5 if going at night.

Thanks to Dan's advice, I'll be going from San Jose to LAX in mid-April for a 4 day trip, traveling the Pacific Coastal highway.

I'll post some of our tentative plans, and would be happy to receive any insights you folks may have.

Never got around to posting plans, but I'll try for a TR.
We'll be staying at the Hilton in Santa Cruz, a cabin outside of Carmel, a B&B in Solvang, and the CP at LAX.

i used my 2 free hyatt nights at the carmel highlander. Here are my thoughts on the property in case anyone was interested...
I drove up from the LA area and took PCH. The drive was nice, but very windy and you need to go slow around the curves. If you are not so interested in the seanary or if your wifes gets easily nausious, take the 101 to get here.
When you drive up to the property, it seems pretty old and not so nice (despite the pics on the hyatt website). However, the inside of the buildings are all redone and very nice.
We were upgraded to a townhouse at check in which was really nice. It's two floors, the top floor has a fire place, living room and kitchenette. The bottom floor has a jacuzzi, bedroom and walkin closet (great for putting a crib). I can't imagine a regular room here is anything special.
Has a great view but the room is set back from the room a little beach a bit and you can't actually walk down to the beach from the property. The staff is very nice and helpfull, but its not a ritzy place. The only other park hyatt ive been to is paris and this one is suppose to be themed like a lodge. No one in tux's walking around, but everyone is curteous and helpfull.
I called 2 times requesting a kosher breakfast. I heard they get you something from chabad of monteray. However, when I checked in, they told me it wan't arranged. They tried to be very accomidating and gave me a whole basket full of fruit and dry cereal instead. We brought our own milk so that worked out well.
There are plenty of beaches to go to in monteray and in other parts of the area. baybikes.com has some rentals you can do with a family.
Definitely a nice place to visit, and I'd recommend it if you can get a townhouse. It's more a place for R&R, but if your looking for touristy stuff to do, try a bigger city.
