For Shabbos you will want to stay within walking distance of this location, Rabbi Greenberg’s Chabad Shul and restaurant. Links to nearby hotels and Shabbos reservation form on website:

Going for business for 2 days is it worth staying extra day to see any attractions?

Have meetings near airport, should I stay near Chabad or airport area?

There is a fellow there who does a tour of the Jewish aspects of the city and he can direct you to very interesting areas and markets to add to the experience, afterwards. http://www.shanghai-jews.com/
It is is certainly worth staying for that, if he is conducting a tour on the days that work for you. The airport is a good hour from the Chabad house that has the daily minyan and Kosher restaurant. If those are important to you, you should stay near it.

Should be able to do all the major attractions in a day or two.
Also worth going through the fake markets. You can get allot of goodies there for close to nothing.

This is what they recommend.
When I was there I was working for the chabad so I didn't stay in any of the hotels but the people there seemed to be happy with the choices.

I'd say you can do the tower the technology museum and the fake market with time to go to chabad to eat
