In general alltrails.com is a good resource to find hiking trails that meet your interest (you can filter by length, difficulty, popularity, and review pictures and comments).

Zion National Park
--Fantastic hiking and waterfalls among magnificent red rocks scenery. Temperatures are usually substantially cooler than surrounding cities.
--Unique and popular trails include Angels landing (Hard), The Narrows (hike up a shallow creek in a narrow canyon, be aware of flashflood risks at certain times of year, or following rain), Canyon overlook trail (right after the tunnel along the right artery) among many others stunning hikes.
--There is also stunningly beautiful scenic drives both along the main road (only via shuttle in the summer) and the right artery (via your own vehicle), and there are also bike and e-bike rentals in Springdale UT (near the main entrance to the park).
--There are trails that are only accessible via other entrances (Kolob)
--The average visitor will likely get most of the beauty of the park in 1-2 days

Bryce National Park
--Bryce is a relatively small national park, but a geological wonder, with uniquely colored rocks and hoo-doos (stone pillars formed by repeated freezing/melting).
--The visitor center has a 25 minute video playing every 30 minutes for some background on the uniqueness of the park.
--There are a variety of stunning scenic viewpoints right off the main road (you can take a shuttle or your car), that give you a lay of the land and provide stunning photography opportunities. 
--There are a variety of trails along the rim, and many hikes that descend into the basin where you can see the unique structures up close.
--The beauty of the park shines even more around sunrise/sunset.
--Bryce is also a "dark sky park" (particularly good place to view stars on a clear night).
--The average visitor will likely get most of the beauty of the park in 1 day

What’s a better option to go with 2 couples each with a 9 month old baby, Lake Powell or Yellowstone ? (Lake Powell is a little easier since you fly in to las or phx where there is plenty of kosher food vs slc )

Unless you're planning to spend the whole day on a boat, there's not much to do with a baby at Lake Powell. And it's a long way to go for 1 day on the water, though you can add on Antelope Canyon and Horseshoe Bend. There's more to do at Yellowstone, and having a baby won't prevent you from doing it in the normal way like it could at Lake Powell.

Personally, I loved Goblin Valley, Little Wild Horse, and Arches. I wasn't so enamored with Capitol Reef, though the road to get there is outstanding. That said, unless you're flying into LAS and out of SLC, I don't think it's worth all the extra driving on your tight schedule, not to mention the possible heat.

I would likely head to Page and go to Antelope Canyon (advance reservation required) and Horseshoe Bend. You could also spend a day enjoying Glen Canyon swimming and/or boating, or you could head to Buckskin Gulch or GC North Rim, depending on how much driving your family is up for.i

Thanks. South it is. Any suggestions among or on how to allocate the time (1-1.5 days) among the southern areas: (Coral Pink Sand Dunes NP, Red Canyon (Kanab), North Rim of Grand Canyon, Vermillion Cliffs, Page, Horseshoe Canyon, Glen Canyon, other).

For context, We'll be spending time in Sedona and South Rim of GC too, so would appreciate variety from what we'll see there and in Zion and bryce.

I've been to antelope canyon years ago, and understand they now charge $70-$100/pp, (which is pricey! especially travelling with 5 kids)

Debating if should stay different place every night, closer to the park/ destination of the next day or better to rent a house like in kanab. Any recommendations of where to stay- plan is to do Zion, Bryce, head to page for antelope canyon, horseshoe bend and possibly
Lake powel.
Looking for idea of excursions- like atv/ Rapelling to do as well.
And which hikes would be recommended to do in either park…
Anything near by worth going to as well- red canyon? Buckskin?
Best way to plan out the day? Ways to rent bikes and get around park? How long do the hikes take?

packing/unpacking, and checking out/in one hotel to go to the next one (with a family) takes hours. We find its often more efficient to travel a bit further (e.g. an extra hour of travel) and stay in one hotel.

check out alltrails.com (or app) for a list of hikes in each park (and in every city). You can sort by difficulty, popularity, distance, kid friendly . . to suit your group. They also have pictures of the trails and user comments.

I think Kanab would be a good equidistant location for you so you don't need to keep switching hotels. For trail recommendations, you can use Alltrails or I also find it helpful to stop by the visitor center in each park and talk to the rangers. They are usually very helpful and are the most familiar with the conditions.

Cedar City, is another option, slightly further, with plentiful reasonably priced hotels.

So many choices. Just back from a 9 day Utah trip, the place is amazing. Out of SLC, my #1 choice if you have time is a 90 minute drive east to Mirror Lake. Gorgeous scenic drive, with waterfalls, glaciers, a drive over a beautiful mountain pass, and a walk around picture perfect Mirror Lake.
Or you can go 40 minutes to Park City, ride the Town ski lifts for beautiful views of the PC mountains, walk Main Street, etc.
Also there is Utah Olympic Park, where there are many fun activities to do, especially if you have kids or like ziplining, tubing down a ski hill, Alpine slides, etc.
Around SLC you have Antelope Island State Park on Great Salt Lake, with wild buffalo roaming.
Near Park City is a great scenic drive over Guardsman Pass, views of the Jordanelle Reservoir, and if you come back through Provo, you'll pass Bridal Veil Falls.
Everything above is within an hour of SLC, except Mirror Lake which is a bit further but worth it.
THE SLC area is amazing, not to mention the 5 stunning National Parks further south (about a 3.4 to 4 hour drive to reach those).
