That's the point I keep thinking. I can't imagine any kashrus authority allowing you to rely on their statement that these pots are kosher and are kept separate.
YMMV

Personally I don't think I'd be comfortable unless I did that and was watching the entire process and watching the entire process sounds like it would be awkward.

It's not awkward since it's an open kitchen here. You can clearly see everything he's doing. You can probably sit down and see it as well.

Did you ask if they'll do omelettes or other breakfast food?
There must be places that do that.
If not just make your own and double wrap, there's $750 in your pocket.
Anything that's able to be made in a pan, so long as they have the ingredients, he can do it.

I didn't actually ask for anything from him except for an avocado salad ($25!) but they kept telling me it's possible (i.e. Pleaseeee spend money here)

Haven't asked, but there is something to be said for fresh breakfast.

I guess the easiest way to do it is bring your own pan and watch from the open kitchen? Gotta speak to LOR I guess.

I have breakfast from Hermolis, very good....
Bagels, cheese, lox, yoghurt, danish, creamcheese and a hot part eggs double wrapped. All is frozen... you defrost it and the eggs get heated up.
You can do that yourself even, not a big deal
I wouldnt rely on it here, as the pots have to be locked up with only a jew having the key, so their pots are no good after first use unless u take them to the room every night... same goes with knifes and other stuff used for salads and vegetables... So i dont want to shlep the whole kitchen to my room every day

Depending on how accommodating SR MLE is with Kosher brekkie, I'm currently torn between spending for SPG Plat on Ritz and just paying for breakfast outright.  Assuming brekkie costs $150/day/couple ($55+++ per person), then below are my calculations (assuming (i) spend on Ritz 2x category and (ii) MR can be sold outright at 1.4).  Clearly, mathematically, it's better to just outright pay, even if at the end I'll be Platinum for the next 1-2 years.  But then, the thought of paying $750 for daily fruit and perhaps an omelette is making my wallet hurt, even if it'll be fatter from doing so.  Bizarre, I know.

Depending on your travel this year, SPG Platinum could have wider ranging benefits which I am sure you are aware of. Is your math and decision inclusive of that?

It's one thing to spend $70k on general purchases, but to spend it on flights that you'd otherwise effectively be getting 10% back on is the equivalent of spending $6k on that breakfast, which isn't even ideally kosher.

Just because something costs $135 doesn't mean it's worth $135 or even $35.

I haven't, because I can't put a number on it.  Suffice it to say, though, I don't think I'd get several thousand dollars of value out of it.

Plat.

It's one thing to spend $70k on general purchases, but to spend it on flights that you'd otherwise effectively be getting 10% back on is the equivalent of spending $6k on that breakfast, which isn't even ideally kosher.

As I said in the OP, I'm assuming a straight sale rate of 1.4.  I have enough MR such that I won't likely be able to get 2 CPP anytime soon.

OUCH!!! Way worth doing the platinum challenge.

Not according to my math...

You plan on booking 70k worth of flights in the near future, but can't get 2cpp from your MR? We'd have to be talking in the tens of millions.

Not really. If someone has even 2.5 million MR, that's enough for $50K in flights.  I don't know about you, but I don't anticipate spending $50K on flights any time soon.
