No ice, just freeze the food.

There are some ice packs out there that will actually freeze your food in a polar cooler.

I sometimes will freeze them in a hotel freezer.... and leave my food in the cooler over night, then place the ice packs in the cooler during the day.

I think you'll be fine. We flew NY to FRA with an hour layover, then onto SIN. Until we got the stuff into the freezer at our hotel in SIN it took a while, but everything was frozen solid with no ice.
Our trip continued to MLE where the stuff spent all day out of the freezer (AM flight from SIN to MLE, then waited a few hours to get onto a seaplane, then was forced to disembark on a different island due to weather, spent a few hours there until we made it to our resort- and voila still frozen solid).

Ice helps. I had cancellation in Doha causing me to stay 14 hours later than expected. Without ice, the food probably wouldn’t have made it.

Well that proved...nothing at all.
I've gone days without ice in a PB. No issues to date.

I’d over insulate because you never know what will happen.

Especially when you’re screwed if your food doesn’t  make it.

And when you’re connecting in DOH when the bags may be in 100 degree heat, things can happen.

The RC will not be far from the WA, we passed by with the Jetski. In February they were still in the early stage of construction.

Keep in mind that airplane cargo hold is typically pretty cold (~50 degrees). So not much a risk of thawing while in flight if insulated, even if flight times are long.

If you are transiting in AUH/DXB/DOH, for example, and baggage is kept in a non A/C place between flights, it can thaw much quicker.

When I ended up close to 48 hours in transit, including full day transit in DOH (due to cancelled flight), I spent time getting my bags out and to a freezer for the transit. Otherwise, the food may have not made it.
