Anyone stayed at any of the new SLH resorts acquired by Hilton recently? Or recommend one of them?

The Waldorf has a menu. But it's very expensive.
You're better off bringing your own frozen catered food and have them warm it up for you (or bring a Hot Logic and do it yourself)

Has anyone stayed at the Park Hyatt Maldives Hadahaa recently and opted into one of the dining packages?

We're considering the all inclusive package and was quoted $220pp/night, which includes breakfast (but that's also a Globalist benefit), 4 courses (appetizer+main+side+dessert) each for lunch and dinner, nonalcoholic drinks, and "selected" alcoholic drinks.  If we don't do the all inclusive, we'd likely do a late breakfast in the morning and skip lunch most days, and share an appetizer+dessert for dinner to save on food costs.  The reason we're considering the all inclusive is for the drinks - we're anticipating 6-8 drinks a day between the two of us.  The included lunch+dinner is a nice touch.
