1. How do I fit that in my luggage.
2. I would imagine that is not really allowed.
3. If they store my food wont they know something is going on?

You can bring a sous vide circulator.
They are very compact, all you need is a bucket or sink.
Yes, the food takes longer to warm up (about an hour per inch of food thickness), but you can't overcook it, and it can stay at the perfect temperature for hours.
If you get your meals vacuum packed you can dump them directly in the water bath, otherwise ziplock them and suck the air out.

I just used this method for 4 days in an area with no kosher food, and we ate like kings.

Can it take HD items like a SV or toaster.

Toaster really doesn't take up that much room. Get a new one that isn't very big, put cloths and stuff in it and place it in your suitcase. Toss it before leaving the hotel.
You can also buy a small blech/plata/hotplate which is much easier to pack and will take up very little room in a suitcase and just heat up the food for an hour on that.

On one hand the SR is pure luxury but it seems I’ll get a better room at the Westin.

Might have good luck emailing SR MLE and asking them if they’ll give you a comp upgrade to a better room. Not unheard of that they would do that even pre corona so it’s possible with less business they might upgrade you (any status could also help). Other options they might give offer is have you pay for an upgrade in cash or points or simply nothing because December can be busy for them.

They often have the option for redemption + cash upgrade, where the cash component is very low.

I recently looked into a stay at the STR for January, and the sunset overwater villa was priced at 600k + $350, for 7 nights, that's $50/night for the upgrade

As a kosher traveler I don’t gain much from all these luxuries (or do I?)
And at the SR everything seems more expensive. The seaplane ride itself is $200 more p/p. I bet each spa treatment, and water activities,  would also be way more expensive!
