Going as a globalist. Any suggestions on which one to stay at?
I went in the summer and stayed in the Marriott Marquis on the bay, it was a very nice view but the location was quite annoying especially as a frum Jew it was a pretty far drive to shul and kosher food. (I don't find it a big deal to drive 30-40 minutes to an attraction to spend a good chunk of the day, but the places I need to go repeatedly and for a relatively short time it was annoying.) Based on location, Regency Mission Bay seems to be the best.
I wonder what people who type "u" instead of "you" do with all their free time.

+1. This is always how I approach vacations/trips, but it doesn't seem to be the norm on these forums. If the OP cares about this, Mission Bay is certainly the best option of the 3 (there's also another HR in La Jolla, but I don't know how it compares). GH Manchester is right nest to the Marriott Marquis, and the PH is way out there in Carlsbad.

Was there a few years ago. At that point only the tower was renovated, while the other sections were old. At this point the entire place should have been renovated

Was nice. The receptionist moved out there from NJ 2 weeks beforehand so we got a free corner room upgrade.( Because we're from NY..)

They have nice grounds, and some water sports on premises.
