I will be going to CA for an extended weekend with my family including a baby.
Where can I spend Shabbos somewhere with beautiful grounds? Either an Eruv or a gated resort?
Walking distance to minyan.

La Jolla is stunning in general and adty yeshrun is very close to the ocean
not sure about eruv boundaries as I dont really frequent there

Is the San Diego safari park worth it without adding additional paid safaris?

I would give it shot try a few blocks away from the hotel drop your family with the bags and go searching

Seaworld has kids free with paid adult. $99 + free kid.

If traveling with kids I highly recommend skipping the "safari".
It’s just an (Extremly) overpriced zoo with lots and lots of walking. Zero safari experience. Even the petting zoo was closed off because the animals were eating

The only unique experience was the kangaroo enclosure.

Maybe if you're planning to do one of the paid safaris than It's worth it, I can't say as I did not do any.
