There are beaches, hiking, amusement parks

Swim with Seals and Leopard sharks in LaJolla. Snorkeling and surfing is there too.

There are beaches, hiking, amusement parks
more of the fun activities than the museum like activities

amazing hiking throughout San Diego.  I'd also recommend surfing (and lessons if you haven't done before).

Has anybody stayed at the Hyatt Mission Bay? I'm going because it is supposed to have one of the best pools/waterslides in america. I'm staying over shabbos and i wanted to know if I should book the Waterfront K/Q suites or the corner suite? Which one is better for shabbos (ie not on the 90th floor)?
Also, Whats the closest and best kosher place to eat near there?

Ouch the US Grant is not nice.. small rooms, bed carpet smell, not the greatest service.  is there any nicer SPG property in the area ?

I satyed there over the summer and I was not impressed at all. The rooms were old and outdated. I stayed in a corner suite (or wahtever their biggest suite is) and it was not on the level I have come to expect with Hyatt. The waterslide and pool are also overrated. Granted I was there in the summer, but it was very crowded and not that big. Location was good in that it was near Seaworld and on the bay (you can rent a Jet Ski down the road) but it is a 15 minute drive to the closest Shul (either Chabad downtown or in La Jolla)

If you don't need anything fancy you can stay at the Best Western Lamplighter Inn.  They are very accommodating to frum people and there are always a handful staying there.   They offer 2 bedrooms suites and rooms with small kitchens etc. Might be something to look into.

Sheratons in both SD (Marina/Tower) and LaJolla are nice

Try Sheraton or Residence Inn in La Jolla, both in eiruv and walking distance to Adat Yeshurun shul
