Separate tickets to TLV

I found a relatively cheap one way JFK-TLV stopping in Athens 10/6. (Norwegian to Athens, El Al to TLV) $400ish total. (or 865 premium economy which actually is business since they charter a a340 temporarily)
Strangely it does not show up in any portal but can be booked separately. Arrival is monday morning 5AM and leaves to TLV @ 10AM.
Is there any issues with booking such a ticket in terms of transit visa or the like?

Slightly related, since it does not show up in expedia, UHR portal wont work. there is a cashback option but it wont credit 1.5 for reserve cards. is there any way around this?

This is known as a self connection. You are not protected if your flight is delayed or canceled and causes you to misconnect. You will need to wait for your luggage at baggage claim, clear customs, and then check it in with the second carrier. You aren't privy to the transfer lane or transfer desk.
That being said, 5 hours should be long enough for you to do all of that.

TLV - Barcelona      el al 20k qantas economy 9am to 12pmish
Barcelona - EWR     6pm to 9pm  Norwegian premium (not business as this is the 787 not the chartered a340) $599 i think

norwegian also has a tlv - barcelona with better timing for connection but is more expensive

norwegian flies direct to nyc from around 6 european countries ( athens, barcelona, cdg, london, copenhagen forgot other one) so there are many possible options, although not so many on 10/23 from what  i searched

Americans don't need a visa to enter the EU.

What passport are you flying with?

The real issue with Norwegian that you would be "banking on" is how high is the probability of them going bust before your flight? In addition, even if they are operational, when Norwegian cancels flights (usually with short notice), they do NOT reprotect you on another carrier.
