I believe they're open 2x a week (or at least that is the plan) with a rotating chef.

I can't understand their business model:
1) You're only open 2x a week that means any leftover meat that wasn't sold can't be used the next night

They can buy what they need for the day and can always use leftovers ingredients in eat a pita.
And they also do catering.

2) A chef that is available to come upon request to me sounds like he's not good enough to have a full time job

Valid question, but looks at the pics. The food looks 100x better than anything being served in Lakewood right now.
I wouldn't care if it's 5 year old preparing the food if that's how it turns out.

3) The restaurants that have a full menu to choose from have a hard enough time staying open in Lakewood so how is your preset menu gonna make it any easier

Again, the menu looks 100x better than anything in Lakewood. It also looks like a side gig from a guy who owns a restaurant and can use the same employees and overhead to make the food. There's catering too which never hurts.

4) The person you want to go out with has to be interested in ordering the same food as you. I've yet to take my wife out and both of us wanted the same thing.

After 6 courses, I hope you could both find something you enjoy eating

Besides for the fact that it's a rear entrance and you walk up wooden stairs, location and building decor is nasty.
I would be very surprised if they're open in 6 months from now with the same business model.

One thing forgot to mention, it'll cost about $250 for a couple. I don't think there's that many people in Lakewood that would drop that kind of money on one nights dinner when they can do another restaurant in town for 150.

The concept already exists in the secular world called "pop up restaurants". It can target higher end customers who are already dulled by the menu of the local high end places and are looking for new and exciting food. It's true that there may not be enough such people in Lakewood to support such a business model. Time will tell.

How many people are interested in making a reservation a day or 2 before they plan on going out? Most people I know either decide that morning or don't call until that morning.

I happen to know the person who placed the attached ad in this week's Lakewood voice. They have been doing this type of thing in Brooklyn for a while, with overwhelming positive response and happy clients (people that have spent thousands on surgical procedures with dermatologists, and were unhappy with results, compared to price/results with this type of treatment). My own DW and kids had some skin tags and moles removed and we are very happy.

The person forwarded to me the following text message received: "That was really not nice to place a add with such ugly pictures! Just because you look at that stuff all day, doesnt mean you Have to gross out the entire Lkwd!"

I think the person who wrote that should be very happy that they don't have any such conditions (or worse) in person, or in their family, but I took a look at the ad, and it didn't seem terrible to me (I was shown much worse pictures that I said shouldn't go in a general circulation publication).

Were they wrong to place this kind of ad in the Voice? I think that even if someone thinks the ad is gross, just don't look at it, flip the page or rip it out. Does it really warrant such a response? They have people in Brooklyn begging for appointments and can easily fill up an entire week of appointments, but decided to bring this to Lakewood too, so that the Lakewood community could benefit from it too. Does this have no place in Lakewood?

I've never reserved a restaurant in advance. I always book the day I want to go out. It's just another inconvenience.

I tell her where we're going but I don't book until that morning. I didn't even know that restaurants take advanced bookings
