Why?
Because you the consumer have no practical way of finding out if this batch was the first batch after milk.

Unclear who will take over the hechsher

Halachically, is there mirsus if the companies certified don't know yet? What if they do know?

Was it a 1 man operation? If there is a mashgiach who is still checking in, it should have no effect. Who was running it while he was sick?
I wonder what people who type "u" instead of "you" do with all their free time.

Due to a change in suppliers So Delicious! ice cream sandwiches are *no longer pas yisroel.* The company did not provide production codes for the date of the change. Wondermilk still had pas yisroel inclusions but that will change to non-pas yisroel before the end of the year.

Don’t need to regardless since it is mostly used בהפסק כלי not directly on it

It is not simple at all that "mostly used" is sufficient.

he probably meant ' incidental use ' and not 'mostly'.
If a  table is not meant to be used with direct food contact .it shouldn't require tevila. R shmuel felder seems to say it's dependent on minhag hamakom or if there isn't a minhag then on the individual

I put down chips and other things occasionally in direct contact with the table. I imagine others do this as well.  Unless you’re going with the pri chadosh it should require tevilla.
R shmuel felder seems to say it's dependent on minhag hamakom or if there isn't a minhag then on the individual
He says you must specifically decide not to use it for direct contact uses in order to exempt it.

Apparently there is a non jewish woman who now will do the party planning for your simcha in Lakewood area. Go to the Gemach with you, pick up dishes, order food, set up etc.
what are the issues that have to be addressed in order for this to be a kosher event?

To have someone who will be on top of kashrus of every single step.
