milk st cafe is not certified by KVH Kosher. I should have specified "any KVH Kosher certified facility"
do they certify a lot of the Trader Joe's items, too ?
Those are just private label items produced at KVH plants.

I believe it's certified by the OK.
The rennet is coming from keivos from a shechita in France. The process they are using is as follows: the keivis are soaked until the water absorbs the peptins then the water is concentrated and the remaining product is the rennet they are using. I believe there were several concerns which should have been addressed.
1. Kavush
2. Basar b'chalav

I have also heard that they were soimech on the fact that the water was pagum.

"Animal rennet and lipase can be kosher, however. If the kosher source animal is slaughtered, de-veined, salted and processed according to kosher law, its rennet and lipase are fine for kosher use. (There is no halachic problem with using animal-derived enzymes in cheese [mixing meat and milk] since the amounts used are miniscule. Moreover, the enzymes are not cooked with the milk, and they are flavorless. Also, the davar hama’amid principle cited earlier only applies to non-kosher substances, and the enzymes are actually kosher.) Still, even cheese made with glatt kosher animal rennet and lipase is considered gevinat Akum when manufactured by without special rabbinic supervision, as the sages created a general ban on such cheese"

The K doesn't belong to any certifying agency. But I guess I hear what you're saying - they can refuse to certify any Kellogg's product unless all products bearing a K are certified (and remove K from any they can't certify).
