There are many differing opinions on what constitutes mevushal and some rely on more lenient opinions which some people may not wish to rely upon.

What does this have to do with trust? One can trust them to keep to their rulings and standards yet want to be more machmir than those standards. There are many examples of this such as cholov stam, pas akum, mashgiach tmidi on fish, etc.

Presumably there are all sorts of kulahs used by various agencies on many products. Does that mean one needs to research every product? What about Bishul akum questions that come up on nearly every product? Wouldn't it make more sense to just exclusively use hechshers that conform to one's standards?

bishul alum doesn't come on nearly every product. Probably not even on 1/4 of certified products.
Also, many people on this board have asked specific questions regarding bishul akum. Grape juice is a known red flag ingredient with many known kulos (many of which I suspect would shock quite a few members on this board). Therefore it make sense for someone to ask questions regarding grape juice.

1. Yes there is good reason to have whom to consult with about which products you do or don't use. It is not as difficult as it sounds. Products are split first into classes of which are more prone to which potential issues. Then you can start narrowing down from there.
2. Unless there is a hechsher run by the same person to whom you ask your shaylos it is unlikely that you will have one which totally conforms to your standards.

Not to mention that standards are not publically posted (though some agencies are more transparent than others when asked).
