If you are Makpid on 212 you know which Hechsheirm Kasher at that temperature.
Regarding CY, there is a big split if video observation in a Jewish company is considered CY. Most Israeli hechsheirim rely on it, while (almost?) all US hechsheirim, including OU and OK, do not consider it CY.
This can make a difference in which Israeli restaurants one will eat.
