If you are Makpid on 212 you know which Hechsheirm Kasher at that temperature.

Regarding CY, there is a big split if video observation in a Jewish company is considered CY. Most Israeli hechsheirim rely on it, while (almost?) all US hechsheirim, including OU and OK, do not consider it CY.
This can make a difference in which Israeli restaurants one will eat.

Not if it's branded with a very Jewish/Heimishe name, and a bunch of Hebrew letters. People don't expect a Jewish brand to be non cholov yisroel, as opposed to a non Jewish brand obtaining Kosher certification.

Ideally, since the simple halacha is that חלב שחלבו עכו"ם ואין ישראל רואהו is forbidden, then whenever relying on a heter which isn't universally accepted, such disclaimer should be clearly spelled out.

For example I have seen once before a product that uses food coloring produced from carmine, it had a Hechsher and it stated clearly that it contains carmine based on a certain heter.

ר' אייזיק לנדא has been heavily involved in the Hashgacha for the past several years. At first on a regional basis for the north (as he was living in Tzfas), and IINM for the past 2 years full involvement in everything to do with the hashgacha.
