The rule is not that you need to find out where his knowledge came from. You just need to know our be able to assume that he is capable of being it accomplished in some way or other.

Also, you need to know what someone means when they assure you “it’s kosher”. Sometimes it may be self evident. Other times you may need to ask a question or two

Some sources that in order to be believed one must know that the person understands what is needed to accomplish it are:

I have mentioned a Ridvaz but need to find it.

The basic idea of what they write is that the reason for demai and not trust amei ha'aretz regarding tuma is because we don't feel they have the prerequisite knowledge of how to accomplish it.

There is a knowledgable person in charge of the kashrus. That does not mean that there is a outside hechsher.
AFAIK At least at two points in the last ten years, when issues where brought up to the attention of the RY, significant changes were made in the kashrus system. At some point, the EC came and did a reveiw of the whole system.
They have at least 4 paid mashgichim who don't have any other responsibilities.

I don't know about always, but as long as I was there there was the same official mashgiach, Rav Weintraub. Whenever anything truly out of the ordinary occurs, he'll often discuss the matter with Rabbi Stilerman, Rabbi Kuber and/or Rav Nissin Kaplan.

IME this is a huge issue in kashrus of food service providers and not discussed enough, heard way too many horror stories of mashgichim being shortchanged (ie. not paid) by kashrus agency and/or establishment owner. Time for FS mashgichim to Unionize!

That hechsher/location has nothing to do with this issue. Iinm, mashgichim in JNB did unionize a few years ago.
