I think you can add 5 at once to 1 card.  Like you're ready to have multiple AUers use this card now.
But doing that with multiple cards would be a little strange.

They follow up, they send letters and emails and keep sending them. I have yet to respond to one letter or email, haven't had any issues

After getting numerous requests for SSN
s of my 10+ AU's on multiple cards, I finally called them with the info. That didn't stop them, they still send requests for the SSN's. smh

Yes.
how does chase match an AU to that person's social when you don't provide it? i'm an AU on my dad's Saphire and it shows up on my credit report and my ssn wasn't given when i was added. i hate it that it's on my CR - his utilization is nuts.

Remove yourself a AU.  Wait a cycle. If necessary, (probably will be) get in touch with the credit bureaus and tell them it was never your account.

chase somehow figures out the social and reports it.

SS# is only one of many things CRA use to match the person to the report. Each piece on info (SS#, DOB, Name, Address, ect) is given a weight. All this info will give them a confidence number.

This is rlly important for me. The AU's last name will be changing in the coming months  ;) and I was wondering if it was worth waiting or if the CC company will realize its the same person.

If he has a business, maybe he can get an Ink Plus or some other business card that will not affect your credit report.

he won't mix personal and business expenses. He got audited once, and he said it was a nightmare. But thank god it all worked out at the end

If your father has decent credit he can get a new card account just for you to be the authorized user and not use it himself. If you keep the utilization low and keep up the payments, it will not only help your credit rating, but his too. His utilization on the other accounts that you are not authorized on will not affect you. (When applying for a new card, some people offer to split the credit limit of an existing account if that is what it takes for the issuer to open a new account. In your case, it seems like he needs the existing limit so this is not a suitable option.)

Have you applied for a card of your own?  If you haven't yet been able to get one, I like David R's idea.

Or maybe your mother can get a card on her name for you to use.
