I'm going to be in Stuttgart in a month from now for 2-3 days, and I am looking for things to do while I'm there. I will have a car, so a 2-3 hour drive should be doable.

Cologne = Köln    During the second Beis Hamikdash, the jews were already living in Cologne.  There's a tradition that they did not want to depart from their Homeland.
Check the mikva, I think it's one of the oldest in Europe.  Haven't been there, but it's worth a visit, if you're interested in history.

I saw there is an airport tour or an observatory right outside the airport.....

If you are transferring to a plane bound to the USA there's a lot of extra security. You'll need too much of the 5 hours to make a trip out worth it.
