Chabad Downtown - walkable from many hotels, no Eruv, Shacharis on Shabbos followed by Kiddush, Friday night Minyan last weekend each month.
TheKollel - in the community, yes Eruv, Holiday Inn Vancouver Centre only points hotel in the Eruv, Airbnb options, all Minyanim, free Shabbos meals. Some hotels downtown (outside the Eruv) are about an hour walk.

Stanley park - trolley, rent bikes at Bayshore Bike/Spokes/lots of other places (Westin Bayshore provides 2 hours of free bikes), playground/water are, 9 o'clock gun

Capilano suspension bridge & Grouse mountain are both great. In that order. Whale watching is expensive but where else will you have killer whales swimming under your boat  :)

Dan, et al...

Leaving shortly for a Tour/Cruise of Alaska;  cruise ends in Vancouver on a Friday morning (8/27).  Flying home on Sunday morning (8/29).

Any suggestions on where I should stay (with wife) for Shabbos that will be accessible to food, a shul and, perhaps, some interesting sites to see on Shabbos afternoon?

I booked the sheraton wall centre in vancouver for a few nights in june using cash and points. Does anyone know if its worth it to switch to the westin by the airport?

it is about a 15-20  min drive obviously depending on traffic. From what i hear if you are used to new york food it is not worth it. If you are not or you are not expecting new york level food than it is worth it

for the 10-12 i picked up a decent price w/ enterprise using lkwd. Problem is that Sunday the 14th is like $100 per day!

It's worth signing up with them. Go to usaa.com or do it over the phone. It's free and there's no reason not to sign up. Then you book it through the website using your account and this way it's legit and you get a discount besides for not paying this silly underage fee. If they check to see if your a member you will come through clean. If you want I can post the code.

I actually am a real USAA member so I just logged in and what do you know, they gave me the code and now I got a Budget reservation for that Sunday for $55!

I don't think you can online but you should be able to call up the rental company direct. If nit just rebook your car and cancel the first one to ensure you get the right reservation.

for lunch why not try sabras and for dinner head to maple grill...in between you can do a hike or go to the suspension bridge..do you have a car?
