The mixes are good - Rories and Blends by Orly are the popular ones. My son has celiac and my wife uses the Orly mix. After lots of frustration and experimenting, she completely made up her own instructions as to how to use the mix and it comes out incredible - actually soft and fluffy, unlike the dense previous versions. PM if you want, I can give you her recipe - she has shared it with tens (if not hundreds by now) of people, who now use her recipe and swear by it. Warning, though - it's by no means a quick recipe...

Shibolim makes Gulten Free Oat Matzah (Chometz)which has a decent taste when fresh and is well priced. It is currently sold out but I was told they are doing another run in the next few weeks.

Where in CT? There is a Gluten Free Kosher Bakery in Greenwich - https://www.btwbakery.com/- some of their pre-packaged stuff is under the OK, stores are under a different hasgacha. If you're in fairfield county, might be worth checking out.
