Another thing to bear in mind when Ch"V hoing to a bar is that lemon is likely a davar charif and therefore the lemon/lime in the drink is not kosher.
If lots of lemons were cut it may not be a prob...ask ur LOR
So ask for a dozen fresh lemonades and then followed by daquiri's and colada's? :-)
Lemons are a Davar Charif - so it would be an issue if they cut it with a treif knife.

You could assume by any american place (should probably include puerto rico at least in a hotel establishment) that they have designated knifes by the bar. Same reasoning applies to why its muter to order a cold plain vegetable or fruit salad at a treif restaurant. what about a tom collins? it has gin lemon and club soda or some places use sprite to cut out the lemon (then there would be no issue of the knife)
There are modern day poskim who don't hold of a designated knife being kosher. When I learned smicha I was taught you can not rely on it. Although I hold you can
