I just book a ticket for the adults and then add a lap child later.. people say you can book a ticket for them and just make up a date of birth but I've never tried that..
The problem is not the DOB, its (usually) the lack of name.

What about actually booking a seat, not as a lap child.

The problem is not the DOB, its (usually) the lack of name.

Just did it, happened to know the gender and the probable name so I used it, made up birth date. Not that it mattered because it was a domestic flight and nobody checked any ID for baby (good thing too, because we didn't have any!)...

Domestic is very different then an international flight where the infant actually has an eticket # and needs to show passport.

Domestic you could have just showed up at the airport and had the infant added then.

True. Well children do not need ID to travel dometically, so
I will be flying domestically but plan on buying the baby a seat, hence the question.
you should be fine to do what you have in mind.

True, as per the TSA.
However, airlines reserve the right to require 'proof of age'. Although that probably only pertains to lap children (to verify they are actually under 2) but they don't specify that.

Have a car seat with an approved airplane sticker on it, usually, fly through Europe and have never had an issue. Delta, on the other hand, wouldn't surprise me if they tried to stop me. any advice and if i should bring some proof that i can?

Flew to BCN and back, with a car seat on DL. No issues.

Keep in mind, taxes are full price, and the 10% is of base fare. I booked a $400 ticket with DL and paid $90 for a lap child. The only thing you can do is wait in hopes the price drops, or pay the current price.
