she's trying to keep up with her friends in gan,not easy these days :) rumor has it there is someone she knows who doesn't even know that theres another cabin other than first,such pressure keeping up with the "jones's"these days ;D

Check in counter, you could probably just not bring the stroller with you to the counter, but that would require having a third person at the airport or traveling on separate itineraries

Parking the car/in the bathroom/etc.
Never had a problem checking in separately.  Don't even need to have your S/O checkin at the counter of course if you have the allowance to check the bags all under your name.

I've done it in the past with oversized/overweight carry-ons.

So check the bags outside and have 1 parent carry the child inside for a plus infant boarding pass.

You think I didn't try all the tricks? They are now enforcing this at the entry to the security lines. In general, enforcement of airline policies vis a vis carry ons, strollers etc.. are being done by airport personnel at the security entrance.

I wouldn't be suprised if they start having a scale at the entrance to security as well to weigh the carry ons.

The TSA stopped you from bringing a stroller through security? Or the airline has an agent at security? At which airport?

I've flown on 27 segments with an overweight/oversized stroller on AA, B6, CO, HA, UA, WN, and WP and never have had an issue.
