Cholov Yisroel:
If you go onto Kosher Panama Website you can search for Cholov Yisroel by entering Jalav Israel in the search, just be aware if the site lists Jalav Israel and Lacteo in the description, the establishment may have both CY and non-CY so be aware and double check with the staff.
SuperKosher also had a nice selection of CY breakfast/snack/frozen items available.

There is a local chalav yisroel that isn't up to everyone's standards. It isn't up to Chabad as they use a lower kasherimg temperature than the alter rebbe holds.
This is what local chabad down there told me. Don't hold me to any of it please.

Just take 2 Ubers if necessary. It's cheap enough.

Yoss is a great fleishig to go option, but they only open lunch time I beleive. Jeffreys probably your best bet make sure to ask for CY.

Can light in Chabad, they set up candles for everyone eating there. Or can do what we did which was light tea lights in sink in our room

Want to walk on Amador Causeway with children. Is that recommended? Is it worth taking a ferry from there? Do I need a tour guide?

Can def walk with kids. Also can rent family bikes that have enough seats for children. Ferry to Tabogo is cheap though not much to do on island. Dont need guide for causeway

Much less CY options from what I’ve recall.

Personally would skip La Spezia. Would do Kava for dairy/sushi.

Personally would skip La Spezia.

I loved that place, felt very upscale & reasonably priced, & then main draw was that the entire place is CY

Could be I went on an off night... but I found Kava to be significantly better.

Shabbos go for Yoss Burger
+1 They are open pretty late on Friday. Food was still hot on its own Friday night.
